A substance that stabilizes an emulsion, which is a mixture of two or more liquids that are normally immiscible (unmixable or unblendable), like oil and water. They work by reducing the surface tension between the two liquids.
Common emulsifiers include Polysorbates, Sorbitan Esters, and Glycerol Monostearate. They have a hydrophilic (water-loving) head and a lipophilic (oil-loving) tail.
